After the solid rocket boosters are jettisoned, how does the space shuttle continue to fly straight? Wouldn't the center of thrust have moved relative to the center of mass?

Shouldn't we be able to make a fairly accurate map of the visible (and not visible) universe, based on the galaxies we can see, their distances, speeds, accelerations, etc?
